The ProSweets 2018 in Cologne offers a perfect opportunity to meet with our valued customers. We are looking forward discussing solutions, which enhance efficiency, safety, and sustainability in food production along the complete process chains for cocoa and chocolate products, nuts, confectionery, pastries, cookies, muesli and energy bars.
The confectionery portfolio takes the centre stage at this year’s ProSweets. The first highlight is the new process solution for small batch cereal bar production comprising of a continuous mixer, a small cooling tunnel, and a cutting system – The SnackFixTM. The operating principle is easy. The cereal blend is mixed continuously with binder in the mass preparation unit. After mixing, the mass is fed to the transport belt, formed to a continuous product slab by two equalising rollers and then cut to the desired product width. The equalising rolls, which define the length of the bar, can easily be exchanged and allow product length between 60 and 120 mm. The SnackFixTM can optionally be equipped with accessories like a binder kitchen, cooling tunnel, forming rollers, cleaning tools, ultrasonic knives, etc. The flexible modular design is the perfect start to the industrial production of a variety of cereal bars or productions of smaller seasonal volumes.
Today, production capacity is not the only decision maker. Strict hygiene guidelines and pressure to reduce cleaning and changeover times have created new demands on machine design. All this is incorporated in the second confectionery machine, which is on display, the ChoCoatTM Favorit 420 enrober. Like all other enrobing solutions from Bühler, high performance paired with reproducibility, flexibility as well as easy access for cleaning and service are the key benefits offered to operators. The hygienic design has been a core topic during the development phase of the ChoCoat. The result is an enrobing machine without surfaces where material could accumulate or hide in cavities and recesses.
For compound production, Bühler introduces the new NOVATM S series, which is setting new standards in ball mill grinding. The idea is to have a small process chamber (4 – 6 times smaller than other ball mills) with high energy density combined with an out- standing cooling performance. The pins on the rotor agitate the balls within the grinding chamber, creating high turbulences and outstanding energy density. The required highly efficient cooling of rotor and stator makes sure that the temperature of the product is always kept as low as possible in a narrow window. The solution allows processing compounds to a fineness down to < 20μm in a single pass. The new NovaTM S can easily solve all your issues with quality and flavor deviations, high energy costs or product losses.

Unlike the traditional moulding processes, where the individual steps are positioned in a row and are connected with chains, the robotic elements from our unique ChocoBoticTM modular production cell are offering a flexibility and hygienic design that may never have seen before. Bühler will present a solution how smaller batches of filled or solid seasonal products, new developments or limited editions can now be produced in a smart way. This is also reflected by the positive feedback from the customer where the first unit was installed.
The second digital highlight on the booth is the self-optimising production lines for chocolate masses. The DoMiReCoTM 4.0. Since cocoa, sugar and milk powder are natural products, the manufacturing process relies heavily on the expertise and availability of trained personnel. Every deviation in the raw material quality requires an adjustment on the machines involved in the process. The digital Bühler solution makes the manual adjustments obsolete and staff resources available for other tasks. Bühler will showcase the actual parameters from a real case where first indications show a reduction in energy consumption and loss of raw materials in double-digit percentages.
Experience also the new, self-paced on- line learning service ChocoGenius from Bühler. The new online training and troubleshooting service platform for the DoMiReCoTM process technology is de- signed to help chocolate line operators carry out their job more effectively. It is ideal for beginners, but even chocolate line operators with years of experience will learn some new tricks of the trade.
