California Prunes inspire Valentine's chocolate collection
The California Prune Board has announced a further joint collaboration with British chocolatier, Paul Young.
His latest California Prunes-inspired product will be part of a new Valentine’s Collection due to go into Paul A Young Fine Chocolates shops at the beginning of February, and will feature in the stores’ seasonal window displays.
The ‘San Francisco’ luxury chocolate is created with California prunes, pecan and orange praline. The chocolate is the newest addition to Paul’s romantic destinations collection and will be the chocolatier’s signature filled chocolate for Valentine’s 2016. Young describes it as a ‘66% dark chocolate heart, California prune reduction layered with pecan praline and essential oil of orange, finished in a shimmering ruby metallic decoration’.
Young has been working with California Prunes for two years and is passionate about the versatility of these prunes as a choice culinary ingredient, specifically noting their ability to deliver improved texture, adding flavour and moisture; while also reducing the fat content of a recipe.
